Did you enable debugging at all to print a larger stack trace? Usually debugging will give you an idea of what's not working more specifically.

The server crashes when you hit it once and he tries to hit you using "damage."

If the mob is a passive mob (sheep, cow, pig etc), you can't give it hostile AI without these errors occurring. What does your mob look like?

This mob has worked for a long time "2 years or more" and now it doesn't work.

So, I have tried several things.

I have removed all the mechanics and still crashing.

I removed everything one by one just letting the custom ai and it crash the server.

Hit the mob one time to test it.

    Code:
    Test:
      Type: CHICKEN
      Display: '&dTest'
      Health: 10
      Damage: 1
      AIGoalSelectors:
      - 0 clear
      - 1 meleeattack
      - 2 randomstroll
      - 3 fleeplayers
      AITargetSelectors:
      - 0 clear
      - 1 attacker

It doesn't matter how long it worked for you, and you definitely didn't use it for 2 years in 1.14. In 1.13 Mojang changed the code so now hostile mobs can not attack. There is no way around it unless you disguise another mob to look like a chicken.

I mean it works fine in 1.10, 1.11, etc.

You mean "neutral or passive" mobs can not attack right?, this is a vanilla bug or what?.

Stupid autocorrect... non hostile mobs. It’s not really a bug, Mojang removed the ability to attack from them.
